Pacific Coffee Roasting Co in Aptos is a cozy, light-filled cafe that clearly caters to those who appreciate well-crafted coffee alongside a laid-back atmosphere. The large windows and natural light create an inviting space, ideal for either meeting up with friends or settling in with a book on a quiet morning or afternoon. Outdoor seating is available, which adds to the relaxed vibe and is a nice option on warm, sunny days.

Coffee here is the star — with all beans roasted on-site, the freshness comes through in each cup. You’ll find classic espresso drinks like lattes and cappuccinos, along with more curated offerings such as oat milk cappuccinos and a latte with orange cinnamon, reflecting a thoughtful approach to flavor. The baristas seem committed to quality, taking their time to craft drinks, which is appreciated by locals who value the experience over a quick grab-and-go. Cold brews and unique iced options like mocha chai with almond milk are also on the menu, catering to a range of tastes.

The food choices emphasize fresh baked goods and light breakfast items, including bagels, quiches, muffins, and scones, which are consistently mentioned by visitors as being worth trying. The bagels, in particular, get high marks for softness and flavor, and there are notable gluten-free options that drew positive remarks. For a bit of variety beyond coffee, options like açai bowls, fresh soups, and wraps give the menu a well-rounded feel without overwhelming the primary focus on coffee.

Best visits seem to be weekend mornings or midday breaks when the space fills with a mix of locals who come for a comfortable spot to catch up or work quietly. The staff’s welcoming and patient attitude contributes to the unhurried atmosphere, making it easy to linger over a cup or two. Overall, this cafe suits those who enjoy thoughtful coffee craftsmanship paired with fresh, simple food in a casual, sunlit setting not far from the heart of Aptos.

This place has a nice vibe, lots of light / windows and an interesting menu of beverages , baked goods and pastries. Staff is friendly . There’s outdoor seating too …. A good place to chill with friends or just find a quiet corner with your fav book & beverage :) I got a choc brownie and a latte . Enjoyed both. Their muffins & breads looked tempting as well .

Nice and relax setting. Good fresh coffee but no latte art. There are some breakfast pastries to grab and go. We ordered latte and a mocha tea and they were both good.

They know what they are doing! Our barista took a while to get us the oat milk cappuccinos but it was so frothy and well done. I appreciated her taking the time and enjoyed the coffee.

The best treat for a Sunday morning! We were on a roadtrip and hit the lottery with this stop. Hands down the best gluten free bagel I’ve ever had and yummy coffee. 11/10, couldn’t recommend more! Incredible service and the friendliest vibes :) thank you!!!

We were met by the owner who explained many of the pastries were made with a sourdough starter. Being new to the place I had a few questions unfortunately the cashier was impatient and didn’t thank us for our business. We tried the cinnamon roll, bunt cake and coffee all were delicious.

I see why people are lined up outside the door. They make really good coffee, and more than just make a tasty cup of coffee. They actually roast the beans right there--the bags of beans are on the floor to the right as you enter, and their roasting machine is across from the beans. It doesn't stop there. They have a case of sweet treats. I had a chocolate macaroon that was quite tasty. The staff is friendly. They have tables inside and out. The tables outside have umbrellas for shade. There is plenty of room to bring your friends. One more thing I really like is you can buy the coffee they roast. I am enjoying a cup of dark roast Columbian coffee and a chocolate macaroon while soaking up the rays at Pacific Coffee Roasting Co. I love the beauty that the owner cultivates in this space!

Outstanding mocha espresso and THE best gluten free bagel sandwich I have ever had. And today they had 3 GF bagel options! This is the best coffee shop, highly recommend. The staff is awesome and so friendly.
